Creamy Cucumber Salad with Greek Yogurt Dressing

Thinly sliced cucumbers & onions are tossed in a tzatziki-inspired Greek yogurt dressing! This creamy cucumber salad is a healthier spin on traditional sour cream-loaded cucumber salads & comes together in 15 minutes! It's light & refreshing & the perfect side salad for all your favorite main dishes!

Ingredients
  

  • 2 Persian cucumbers thinly sliced*
  • cup red onion thinly sliced (about ¼ of an onion)
  • ½ cup plain Greek yogurt
  • 1 Tbsp lemon juice
  • 1 Tbsp olive oil
  • 1 garlic minced
  • 2 Tbsp fresh dill chopped
  • ½ tsp salt
  • ¼ tsp black pepper

Method
 

  1. Make the dressing. Mix the Greek yogurt, garlic, chopped dill, lemon juice, olive oil, salt and black pepper together in a bowl then set it aside.
  2. Toss. Add the sliced cucumbers and onions to a large bowl. Pour the dressing over the top and toss until the salad is coated to your liking. Taste and adjust the salt and pepper, if needed.
  3. Serve. Serve immediately and enjoy!

Notes

*It might help to use a mandolin slicer to slice the cucumbers. You’ll want them about a ¼ inch thick.
Variations:
Sour cream: Replace the Greek yogurt with sour cream! I’d suggest tasting the dressing after it’s mixed to see if the salt and pepper needs to be adjusted. (Likewise, taste the salad after it’s been tossed too.)
Crumbled feta: Add a handful of crumbled feta for even more flavor!
Lemon zest: Add a pinch of lemon zest to enhance the flavor of the dressing & brings out it’s lemony notes.
Garlic powder: Replace the garlic with garlic powder! I’d suggest using an ⅛ – ¼ teaspoon of garlic powder in the dressing.
